New York Pork Chops & Apple Sauce


It's no secret that Fall is a special time in New York. Enjoy the bounty of the season with local apples and heritage pork.

Ingredients

  • 4 Berkshire pork chops
  • Salt and pepper
  • 2 tablespoons oil
  • 1 tart apple
  • 2 sweet apples
  • 1 small onion
  • 1 teaspoon fresh sage, roughly chopped
  • Salt and pepper
  • 3 tablespoons oil

Directions

  1. Preheat a large skillet over high heat and add oil. Season both sides of chops with salt and pepper and place in the pan.
  2. Sear until golden for about 4-5 minutes, and flip. Cook another 3-4 minutes on the other side until an internal temperature reading of at least 140°F.
  3. Peel and cube the apples and onion. Preheat pan over medium-high heat and add oil. Add the apples and cook for 2-3 minutes, then add the rest of the ingredients.
  4. Cook, stirring occasionally until softened. Place in a food processor or bowl (if using a stick blender) and pulse until a chunky sauce is formed.
